In Chinese vegetarian cookingmushrooms are frequently used as mock meat to recreate meat dishes that have a rich texture and flavor. King oyster mushrooms are often called the “steak of mushrooms” for their rich texture and savory, umami flavor. They’re perfect for stir-fries, where their meaty texture can shine!

How to prepare king oyster mushrooms
I shredded the mushrooms for this recipe, so they cook quickly. And their uneven surface will soak up the flavor of the sauce.
First of all, use a fork to make indentations in the mushrooms, so it’s easier to shred. If you’re using very large king oyster mushrooms, halve them crosswise so they can be shredded into bite-sized pieces.
Then you can use your hands to pull the mushrooms into strands, making thin, long bite-sized pieces.
A rich brown sauce
I used chicken broth, oyster sauce, soy sauce, sugar and chili oil to make a simple brown sauce that is slightly spicy and sweet. The cornstarch works as a thickener so the sauce will be sticky and glossy.
I highly recommend my homemade chili oil recipe to make fresh chili oil that is very fragrant. If you do not want to make it at home, you can also purchase this delicious chili crisp oil from the Mala Market.
Set up
When you’re ready to cook, your table should have:
- Shredded mushrooms
- Mixed sauce
- Cut peppers
- Sliced aromatics (green onion, garlic)
I used an anaheim pepper in the dish to add a crisp texture and some spiciness. Feel free to switch it to bell pepper or red pepper for a milder taste, or any other hot pepper you prefer .
How to cook king oyster mushroom stir fry
Cooking king oyster mushroom stir fry is super easy.
Start by cooking the aromatics so the oil will be fragrant. Then brown the king oyster mushrooms until lightly charred on the surface.
Add the pepper to cook briefly, then pour in the sauce and cook until it thickens.
That’s it! The king oyster mushrooms will be tender and a bit chewy, with a slightly charred surface. The uneven shredded surface will make the sauce grab onto the mushrooms very well, making it super flavorful.
How to serve king oyster mushroom stir fry
King oyster mushrooms stir fry makes a nice light main dish served over steamed rice. And of course, you can serve it as a side dish alongside other main dishes, with rice and soup. It is also a great topping for noodles, for example, sesame noodles and soy sauce noodles.
