Cooking process
Chinese-style avocado toast is such an easy recipe that takes just minutes. You’ll cook the eggs your way – sunny-side up, over easy, or well done.
Next, you’ll assemble the avocado toast by spreading your slices of avocado on top, then placing the egg on top of them.
Your avocado toast will be complete when you drizzle it with some soy sauce and chili oil to give it that Chinese flair. While you can stop right there and enjoy it, it’s even better with sliced green onion and sesame seeds as a garnish.
Different variations
There are a few different ways to change up your avocado toast as well.
If you try out my homemade soy sauce eggsyou can use these soft boiled and marinated eggs on the avocado toast as well. In this case, I would simply give it a drizzle of chili oil since the eggs are already seasoned.
Poached eggs work great on these toast as well.
If your avocado is a bit overripe and is difficult to slice, you can simply scoop it out and mash the pieces on the toast.

Heat oil in a skillet over medium heat until hot. Add the eggs. Cook to the degree you prefer, sunny side up, over easy, or well done. Transfer to a plate.

Spread the avocado slices over each piece of toast. Top with the fried egg.

Drizzle each toast with 1/2 teaspoon of soy sauce and 1 teaspoon of chili oil. Garnish with sliced green onion and / or sesame seeds, if using. Enjoy!
