Preparing the sahur menu may feel more confusing than cooking on a normal day. 1. Scrambled Vegetable Eggs
Ingredients:
Carrot, cut in half and slice diagonally – 1 piece
Beans, sliced obliquely – 100 grams
Cabbage, thinly sliced – 3 pieces
Eggs, beaten – 1 egg
Shallots, sliced – 4 cloves
Garlic, minced – 2 cloves
Curly chilies, sliced obliquely – 1 piece
Salt – 1/2 tsp
Lada – 1/4 sdt
Broth powder – 1/4 tsp
Oil for frying – as needed
How to make :
- Heat the oil. Add the beaten eggs, stir and let sit until the eggs are slightly cooked. Stir again until it turns into scrambled eggs.
- Add shallots, garlic and chilies. Saute until fragrant.
- Add beans and carrots. Cook until half cooked while continuing to stir.
- Add the cabbage and all the spices (salt, pepper, stock powder). Stir well until completely cooked. Correct the taste. Lift.

2. Soy Sauce Chicken
Ingredients:
Chicken, medium cut – 750 grams
Shallots, thinly sliced – 5 pieces
Garlic, minced – 3 cloves
Onions – 1 stick
Ginger, crushed – 1 segment
Tomato, cut into 8 pieces – 1 piece
Sweet soy sauce – 4 tbsp
Soy sauce – 1 tbsp
Salt – 1/2 tsp
Oyster sauce – 1 tbsp
Worcestershire sauce – 1 tsp
Ground pepper – 1/2 tsp
Water – 250 ml
Frying oil – enough
How to make :
- Prepare chicken that has been washed clean. Slice the lime, add salt and pepper, let stand 10-15 minutes.
- While waiting for marination, slice the shallots, finely chop the garlic, cut the tomatoes into 4-6 pieces, slice the spring onions diagonally.
- Heat enough oil (slightly medium). Fry the chicken in hot oil until half cooked, set aside.
- Heat 3 tablespoons oil, saute shallots, garlic, ginger, until fragrant. Use the oil left over from frying the chicken. If there is too much oil, throw some away.
- Add the tomatoes, then the fried chicken, stir well.
- Then add water, add sweet soy sauce, salty soy sauce, ground pepper, oyster sauce and Worcestershire sauce. Cook until boiling, then adjust the taste.
- Cook until thickened, turning occasionally.

3. Sweet and spicy stir-fried chicken intestines
Intestine Stew Ingredients:
Chicken intestines – 500 grams
Bay leaves – 2 pieces
Salt – 1/2 tsp

Red chilies, sliced obliquely – 2 pieces
Green chilies, sliced obliquely – 2 pieces
Galangal, crushed – 2 cm
Lemongrass, bruised – 1 stalk
Bay leaves – 2 pieces
Soy sauce – 1 tbsp
Salt – 1/4 tsp
Sugar – 1/4 tsp
Ground pepper – 1/4 tsp
Broth powder – 1/4 tsp
Water – 100 ml
Frying oil – enough
Ground spices :
Garlic – 2 cloves
Shallots – 4 pieces
Jahe – 1 cm
Turmeric – 1 cm
How to make :
- Boil the intestines with bay leaves and salt until soft for ± 5 minutes. Remove the intestines and drain.
- Heat the oil. Fry the intestines briefly until you get the desired texture. Lift and drain.
- Heat some oil. Saute ground spices, sliced red and green chilies, galangal, lemongrass and bay leaves until fragrant.
- Add soy sauce, salt, sugar, ground pepper, stock powder, fried intestines, and pour in water. Stir and cook until the water is reduced. Correct the taste then lift.
- Ready to be served.
4. Pontianak Egg Rice
Ingredients:
Eggs – 2 pieces
Soy sauce – 1 tbsp
Sweet soy sauce – 1 tbsp
Ground pepper – 1/4 tsp
Water – 2 tbsp
Garlic, finely chopped – 2 cloves
Spring onions, coarsely sliced – 2 sprigs
Cooking oil – 5 tbsp
White rice – 1 plate
How to make :
- In a bowl, mix water, soy sauce, sweet soy sauce, ground pepper and garlic. Stir well.
- Saute the onion for a while with cooking oil until fragrant, then add the egg. Let it sit until the egg whites are cooked.
- Pour the soy sauce and garlic mixture over the eggs, a little at a time. Pour the soy sauce over the eggs until it is absorbed and the eggs are cooked. The level of doneness of the eggs can be adjusted according to taste.
- Pour over warm rice, ready to serve.
5. Soy Sauce Eggs
Ingredients:
Chicken eggs – 6 pieces
Garlic, thinly sliced – 4 cloves
Shallots, thinly sliced – 4 pieces
Red chilies, sliced obliquely – 2 pieces
Green chilies, sliced obliquely – 2 pieces
Tomato, cut into cubes – 1 piece
Spring onions, finely sliced – 1 stalk
Salt – 1/2 tsp
Ground pepper – 1/4 tsp
Oyster sauce – 2 tbsp
Sweet soy sauce – 4 tbsp
Water – 200 ml
Oil, for frying – 1 tbsp
How to make :
- Fry sunny side up eggs, remove and drain.
- Take some oil, then heat it. Saute garlic, shallots, red chilies and green chilies until fragrant.
- Pour in water. Season with salt, ground pepper, oyster sauce and sweet soy sauce. Stir well and cook until boiling.
- Add the sunny side up fried egg. Stir gently and cook until the sauce thickens and reduces slightly. Correct the taste.
- Add the spring onions just before turning off the heat.
- Turn off the heat, soy sauce eggs are ready to be served.
6. Stir-Fried Shrimp Tofu
Ingredients:
Shrimp – 250 grams
Lime – 1 piece
Chinese tofu – 1 piece
Onion – 1/2 piece
Large green chilies – 10 pieces
Bay leaves – 2 pieces
Laos, crushed – 3 cm
Oyster sauce – 2 tbsp
Salt – 1/2 tbsp
Granulated sugar – 1/2 tbsp
Ground spices :
Large red chilies – 2 pieces
Red cayenne pepper – 5 pieces
Curly red chilies – 5 pieces
Tomato – 1 piece
Garlic – 3 cloves
Shallots – 6 pieces
How to make :
- Cut the tofu into cubes and fry until brown. Set aside.
- Clean the prawns, remove the head, split the prawns in the middle and remove the dirt.
- Marinate the prawns with lime juice and salt for 10 minutes.
- Heat the oil, sauté the onions then add the ground spices, add bay leaves, laos, sugar, salt and oyster sauce then saute until the spices are cooked and add a little water.
- Then add the prawns, mix well until the prawns change color, then add the tofu and green chilies, cook until the spices are even and the green chilies are wilted. Serve.
7. Sautéed Broccoli Cauliflower
Ingredients:
Broccoli – 100 grams
Cauliflower – 100 grams
Shrimp – 50 grams
Onion, chopped – 1/2 piece
Garlic, thinly sliced – 2 cloves
Red chilies, sliced obliquely – 2 pieces
Green chilies, sliced obliquely – 2 pieces
Tomato, cut into pieces – 1 piece
Salt – 1 tsp
Sugar – 1/2 tsp
Ground pepper – 1/4 tbsp
Oyster sauce – 1/2 tbsp
Water – 200 ml
Oil, for frying – 3 tbsp
How to make :
- Cut broccoli and cauliflower into florets. Clean wash. Set aside.
- Clean the shrimp. Throw away the head. Set it aside.
- Heat the oil. Saute onion and garlic until wilted and fragrant.
- Add red chilies, green chilies and shrimp. Stir until the shrimp change color.
- Add broccoli and cauliflower. Stir well.
- Add salt, sugar, pepper, oyster sauce, tomatoes and water. Stir well and cook until all ingredients are cooked. Correct the taste. Lift.
- Ready to be served.
8. Saute Ground Beans
Ingredients:
Young beans or baby beans – 250 grams
Ground beef – 150 grams
Garlic, minced – 4 cloves
Onion, cut into small cubes – 1 item
Ginger, ground – 1 cm
Red chilies, remove seeds and cut into small cubes – 2 pieces
Oyster sauce – 3 tbsp
Soy sauce – 2 tbsp
Sesame oil – 1 tbsp
Black pepper – 1/2 tsp
White pepper – 1/2 tsp
Water – 50 ml
Margarine, for frying – 2 tbsp
How to make :
- Boil the beans in water with the addition of 1/2 teaspoon salt for a while until half cooked. Lift and drain.
- Heat margarine. Add garlic, onion, ginger and ground beef. Stir until fragrant and the ground beef turns gray.
- Add oyster sauce and soy sauce. Stir well.
- Add beans and water. Stir well.
- Season with black pepper and white pepper. Stir and cook until the beans are cooked. Correct the taste.
- Lastly, add sesame oil. Stir and remove immediately.
- Ready to be served.
9. Sauteed White Mustard
Ingredients:
White mustard greens, cut into 3 cm pieces – 250 grams
Carrots, thinly sliced – 1 piece
Quail eggs, boiled then peeled – 8 eggs
Onions, thinly sliced lengthwise – 1/2 piece
Garlic, finely crushed – 2 cloves
Curly red chilies, sliced obliquely – 3 pieces
Oyster sauce – 1 tbsp
Salt – 3/4 tsp
Granulated sugar – 1/2 tsp
Sesame oil – 1/2 tsp
Ground pepper – 1/4 tsp
Water – 200 ml
Oil for frying – 2 tbsp
How to make :
- Heat the oil. Saute the garlic and onion until fragrant. Add sliced chilies. Stir well.
- Add carrots and quail eggs, mix well. Pour a little water and cook until the carrots are half cooked.
- Add white mustard greens. Add oyster sauce, salt and sugar. Stir well.
- Pour in the remaining water. Cook until done. Correct the taste.
- Just before lifting, add sesame oil. Stir well. Lift.
- Ready to be served.
10. Mie Goreng Seafood
Ingredients:
Wet noodles – 250 grams
Large prawns – 4
Squid – 1 tail
Carrot, cut into matchsticks – 1 piece
Green mustard greens, coarsely sliced – 2 stems
Large red chilies, sliced obliquely – 2 pieces
Onions, sliced diagonally – 2 sticks
Garlic, finely chopped – 4 cloves
Ginger, finely chopped – 2 cm
Sweet soy sauce – 5 tbsp
Oyster sauce – 3 tbsp
Salt – 1/2 tsp
Sugar – 1/2 tsp
Pepper – 1/4 tsp
Oil, for frying – to taste
How to make :
- Soak the wet noodles in hot water then drain.
- Large shrimp, split the back and remove the dirt. Cut the squid into rings and clean. Set both aside.
- Heat the oil. Saute the onion and ginger until fragrant.
- Add shrimp and squid. Stir and cook until cooked.
- Add carrots, mustard greens, red chilies and spring onions. Stir well.
- Season with salt, sugar and pepper. Stir well.
- Pour in sweet soy sauce and oyster sauce. Stir well. Correct the taste. Lift.
- Ready to be served.
