Make it practical for the breakfast menu, yuk! This time I want to share various fried rice recipes that are most often made when you are pressed for time.

1. Shirataki Fried Rice
Ingredients:
Nasi shirataki basah – 400 grams
Chicken thigh – 1 piece
Eggs – 2 pieces
Garlic – 3 cloves
Sweet soy sauce – 2 tbsp
Oyster sauce – 1 tbsp
Onions – 2 stalks
Red chilies, sliced obliquely – 3 pieces
Broth powder – 1/2 tsp
Salt to taste
Fried onions – enough
How to make:
- Boil the chicken in enough water until cooked, remove and set aside. Shred the meat.
- Cleanly wash the shirataki rice, then boil it in enough water until it boils. Lift and drain.
- Crush the garlic then saute until fragrant, add the eggs, scramble until cooked.
- Add shirataki rice, shredded chicken, sweet soy sauce, oyster sauce, stock powder and salt then stir well. Add spring onions and chili slices, stir well.
- Cook until the spices are absorbed, then remove from heat and serve sprinkled with fried onions.
Tips
- For seasoning, use a larger amount than regular fried rice, because shirataki rice tends to taste bland.
- For those who are on a diet, to be healthier, replace regular salt with Himalayan salt and low-salt sugar-free sweet soy sauce.
2. Crazy Fried Rice
Ingredients:
White rice – 800 grams
Chicken breast, boiled then shredded – 100 grams
Shrimp – 50 grams
Squid, sliced into rings – 50 grams
Apple hearts, slices – 2 pairs
Eggs – 2 pieces
Meatballs, sliced – 5 pieces
Caisim, coarsely sliced – 150 grams
White cabbage, thinly sliced – 100 grams
Spring onions, finely sliced – 1 stalk
Salt – 1/2 tsp
Chicken stock powder – 1/4 tsp
Ground pepper – 1/2 tsp
Soy sauce – 1 tsp
Sweet soy sauce – 2 tbsp
Oil for frying – 4 tsp
Ground spices:
Shallots – 5 cloves
Garlic – 3 cloves
Red cayenne pepper – 5 pieces
How to make:
- Heat a little oil to make scrambled eggs, then place them on the edge of the wok.
- Pour in a little oil and saute the ground spices until fragrant.
- Add fish sauce and all animal ingredients (shrimp, squid, gizzard liver, meatballs), stir-fry briefly and stir well.
- Add rice, mix all ingredients until evenly distributed.
- Add salt, chicken stock powder, ground pepper and sweet soy sauce. Stir until evenly mixed & fragrant.
- Finally add the vegetable ingredients (caisim, cabbage, spring onions), stir well until the vegetables wilt.
- Lift and serve.
3. Thai Special Pineapple Fried Rice
Ingredients:
Rice – 1 plate
Pineapple, cut into small pieces – 250 grams
Peeled prawns – 150 grams
Garlic, crushed – 5 cloves
Onion, coarsely chopped – 1/2 piece
Curry powder – 1 tbsp
Raisins – 50 grams
Fried cashew nuts – 100 grams
Tomatoes, seeds removed, diced – 2 pieces
Oyster sauce – 1 tbsp
Fish sauce – 2 tbsp
Onions – 3 stalks
Salt to taste
Sugar – to taste
Frying oil – enough
How to make:
- Pour some oil in a wok and heat it. Add garlic and onions, saute until fragrant. Add shrimp, stir-fry until it changes color.
- Add rice, add curry powder, oyster sauce, fish sauce, sugar and salt to taste. Stir well.
- Add pineapple pieces, tomatoes, raisins and cashews. Stir well.
- Lastly add the sliced spring onions, stir well. Correct the taste.
- Serve in half a pineapple that has been hollowed out in the middle.
4. Rendang fried rice
Ingredients:
White rice – 600 grams
Rendang meat, diced – 2 pieces
Eggs, cooked scrambled – 2 eggs
Rendang seasoning – 10 tbsp
Garlic, finely chopped – 3 cloves
Shallot, finely chopped – 3 pieces
Onions, cut into small dice – 1/2 grain
Spring onions, coarsely chopped – 2 stems
Sweet soy sauce – 1 tbsp
Ground pepper – 1/2 tsp
Oil, for frying – to taste
How to make:
- Heat some oil. Saute the garlic, red and onions until fragrant.
- Add the rendang spices. Stir well.
- Add rice, scrambled eggs and pieces of beef rendang. Stir well.
- Add sweet soy sauce and ground pepper. Stir well.
- Add the sliced onions. Stir well again then remove from heat.
- Ready to be served.
5. Red Fried Rice
Ingredients:
Rice – 2 plates
Egg – 1 item
Garlic, finely chopped – 3 cloves
Oil – 2 tbsp
Complementary:
Chicken breast, diced – 1 piece
Shrimp – 5 pieces
Meatballs, sliced – 5 pieces
Corn flakes – 2 tbsp
Peas – 2 tbsp
Spring onions, finely sliced – 1 stalk
Sauce Seasoning:
Tomato sauce – 3 tbsp
Soy sauce – 2 tbsp
Oyster sauce – 1 tsp
Sesame oil – 1 tbsp
Salt – 1/2 tsp
How to make:
- Heat the oil. Add the complementary ingredients then saute until cooked. Set aside on the edge of the pan.
- Add garlic. Saute until fragrant.
- Add scrambled eggs. Stir well then reduce the stove heat.
- Add rice. Stir for a while.
- Add the sauce seasoning. Stir until everything is evenly mixed. Correct the taste then lift.
- Red fried rice is ready to be served.
Tips
- Use white rice that is not soft.
- Complementary ingredients such as chicken, shrimp, corn and peas should be cooked until half cooked before using.
- The tomato sauce used is a locally produced sauce from Makassar, branded Sumber Jaya Tomato Sauce. This sauce has a very distinctive striking red color.
6. Shrimp Fried Rice (Belacan)
Ingredients:
Rice – 350 grams (1 plate)
Garlic, minced – 3 cloves
Small onion, finely chopped – 1/2 piece
Eggs, beaten – 2 eggs
Large red chili, sliced obliquely – 1 piece
Green chilies, sliced obliquely – 1 piece
Onions, sliced - 1 stick
Sweet soy sauce – 1 tsp
Fish sauce – 1.5 tbsp
Shrimp paste, grilled and pureed – 1/2 tsp
Salt – 1 tsp
Ground pepper – 1/4 tsp
Granulated sugar – 1/2 tsp
Oil for frying – 3 tbsp
How to make:
- Heat oil, saute garlic, onions and shrimp paste until fragrant. Set aside to the edge of the pan.
- Pour in the eggs, stir well until they become scrambled.
- Add red chilies and green chilies. Mix well.
- Add white rice, sweet soy sauce, fish sauce, salt, granulated sugar and ground pepper. Stir until smooth and cook until done. Adjust the taste.
- Before lifting, add the spring onions. Stir well for a while.
- Remove and serve warm immediately.
Tips
If you want the color of the fried rice to be more brownish, you can add sweet soy sauce.
7. Egg Fried Rice
Ingredients:
White rice – 800 grams
Eggs – 3 pieces
Salt – 1/2 tbsp
Mushroom stock – 1/2 tsp
Oil, for frying – 2 tbsp
Celery, thinly sliced – to taste
Fried onions – enough
Ground spices:
Garlic – 4 cloves
Shallots – 2 cloves
Red chilies – 40 grams
How to make:
- Fry the sunny side up eggs one by one. Remove and set aside.
- Heat the oil. Saute ground spices until fragrant.
- Add rice, salt and stock. Stir until mixed well and let cook.
- Add celery and fried onions. Stir well. Lift.
- Ready to be served.
- Tips
- Fried rice can be added with additional ingredients or protein according to taste, such as chicken, meatballs or anchovies. Add these ingredients at the same time as sautéing the ground spices.
8. Turmeric Yellow Fried Rice
Ingredients:
Cold white rice – 2 plates
Eggs, scrambled – 2 eggs
Red bird’s eye chilies, thinly sliced – 5 seeds
Spring onions, thinly sliced – 2 stalks
Cooking oil – 3 tbsp
Ground spices:
Garlic – 3 cloves
Shallots – 3 items
Turmeric – 3 cm
Candlenuts, roasted – 3 items
Ground shrimp – 1 tsp
Salt – 1/2 tsp
Granulated sugar – 1/2 tsp
How to make:
- Saute the ground spices until fragrant and cooked.
- Add scrambled eggs and rice. Stir until the rice is completely mixed with the spices. Don’t have any lumps. Adjust the taste.
- Add cayenne pepper and spring onions. Stir well. Lift.
- Ready to be served.
9. Village Fried Rice
Ingredients:
White rice – 2 plates
Eggs, scrambled – 1 egg
Fried chicken breast, coarsely shredded – 1 piece
Mustard, cut into pieces – 6 pieces
Cabbage, cut into pieces – 3 strands
Ground spices:
Red chili – 1 piece
Cayenne pepper – 3 pieces
Shallots – 6 cloves
Garlic – 3 cloves
Salt – 1 tsp
Shrimp paste – 1/2 tsp
Complementary:
Crackers – to taste
Cucumber – enough
How to make:
- Saute the ground spices until fragrant, add the sweet soy sauce, stir well.
- Add white rice, stir until the spices are evenly distributed throughout the rice. Add scrambled eggs. Adjust the taste.
- Serve kampung fried rice with shredded chicken and accompaniments.
10. Oriental Fried Rice
Ingredients:
White rice – 400 grams
Peeled prawns – 100 grams
Fish meatballs – 4 pieces
Garlic – 3 cloves
Onion – 50 grams
Carrots – 50 grams
Chicken eggs – 3 pieces
Onions – enough
Seasoning ingredient:
Sesame oil – 1 tbsp
Oyster sauce – 1 tbsp
Worcestershire sauce – 1 tbsp
Soy sauce – 1 tbsp
Pepper powder – 1 tsp
Chicken stock powder – 1/2 tsp
Salt – 1/2 tsp
How to make:
- Cut the fish balls and shrimp into pieces first.
- Garlic is finely chopped, onion is coarsely chopped and carrots are cut into small pieces.
- Pour all the spice ingredients into a container and mix well. Set aside.
- Heat cooking oil in a frying pan, then saute the garlic and onion until fragrant.
- Add shrimp, fish balls and carrots. Saute again until the shrimp change color then set aside to the side of the pan.
- Pour the eggs into the center of the pan and scramble briefly. Mix the stir-fried shrimp and meatballs that were set aside, along with the scrambled eggs. Pour in the seasoning ingredients. Stir until evenly mixed, then add the white rice.
- Stir the rice until evenly mixed with the other ingredients. Lastly add the sliced spring onions.
- Taste and adjust the taste. If the taste is right, the fried rice is ready to be served.
